single/double serve CCC

the only cookie recipe you need

Hi hi hi!! Welcome to THE COOKIE CLUB (newsletter edition)!! I am Mallory, your fearless cookie leader, and I am so glad you are here. To be honest, I am crying at the thought of you reading this on your phone or computer and feel so lucky you’ve let this land in your inbox.

I am so excited for everything to come for this newsletter!! Other than one show stopping, exclusive cookie recipe a month, I’ll also be sharing cookie baking tips, new merch, exciting announcements, and lots lots more.

OK now to the cookie of the month! Let me introduce you to this gorgeous, single-serve bakery style chocolate chip cookie. Technically this recipe makes two cookies, but that just means they’re perfect for Valentine’s Day. You either need one cookie for you and one for your loved one, or you need two for yourself. Both are completely respectable situations, and more importantly, both merit the need for these cookies.

does a more beautiful cookie exist??

These cookies are big (each is around 6 oz) and chunky. They’re the type you see in a bakery and want to make at home. And now you can!! But there are a few secrets to getting these cookies just right.

The first is shaping the dough correctly. If you want the “imperfect” look of these cookies, you’ll want to shape each dough ball into a cylinder shape, leaving the top rough (and not smoothed over). For a visual explanation, you can watch this video I just shared on social media where I show how to do it.

The other secret is chilling the dough. I KNOW I KNOW, you don’t want to chill the dough. But you only have to chill it for an hour and it makes a big difference. 1 hour in the freezer and you’ve got chunky, soft cookies.

OK enough talk, it’s time for the cookies. I decided to put the recipe into an image, so if you want to print it or save it to your phone you can, easy peasy.
