FALL IS HERE. September 22nd has come and gone (and ICYMI, Sept 22nd is now also National Brown Butter Day!!!) so fall is firmly here. But UGH, where I live, it is still in the 80’s every day and I want nothing more than a crisp 60 degree day. Though today is the last day before the temp drops so I’m trying to soak it in because I know in February I’ll be wanting nothing more than a warm warm day.
I had a shocking realization the other day that I have never shared a pumpkin chocolate chip cookie recipe, and as your designated cookie queen I knew I needed to immediately fix that. After several tests we’ve landed with my ideal pumpkin ccc. I like cakey pumpkin ccc fine, but I feel like that is how most pumpkin ccc are, and wanted to make something different. Mine has pumpkin in it, but isn’t a cakey cookie. It’s soft and chewy and everything I need.
And I’m sure you’re not surprised that I added miso in these cookies but I’m NOT SORRY. When I first tested these cookies, I took one bite and said: these need miso. They needed a depth of saltiness that could only be filled with miso paste, so here we are. If you’ve made any of my other miso cookies (peanut butter miso cookies, brown butter miso ccc), then you know that the miso isn’t overpowering, it just adds a slight salty / umami flavor that is perfect. If you don’t have miso / can’t find it (most grocery stores carry it, including trader joe’s! or any asian market), you can leave it out and add more pumpkin puree in its place.
And that’s it for this month (recipe is below, btw)! I truly cannot believe holiday season is upon us. As I have done for the past 4 years (HOW HAS IT BEEN 4 YEARS?), I’ll be repeating my 12 Days of Thanksgiving Recipes series! I’m stoked about it, but actually really stressed because I will be traveling for almost two weeks of November, and have no idea how I will be able to crank out 12 new recipes those weeks. I share this with all of you because I know you are all my dear close friends <3. I think I will still do the series, but to avoid a completely mental breakdown I’ll share mostly old recipes from 12 Days of Thanksgiving past, with a few new recipes mixed in. I think this is the solution that will work best for everyone, so you can still enjoy the series and I won’t lose my mind! But,,,,,,, one of the new recipes will for sure be a cookie recipe (for next month’s newsletter), so if you have any Thanksgiving cookie requests, lmk!!!!!!!
