may recap!

+ lemon blueberry cookies with mascarpone whipped cream

I feel like the month of May FLEW by. it’s one that always flies for me — the weather isn’t cold but it’s also not too hot, and we are all (hopefully) fully defrosted and out of our seasonal depression. we also have all the spring produce at our fingertips with a few previews into summer produce and it’s really such a dreamy time.

and now it’s June! for half of this month I’ll be in NEW YORK CITY. I’m heading out there to work on a really fun and exciting project that I can’t wait to share more about with you soon!! I’ll also recap anywhere noteworthy that I eat or any fun things I do so keep your eyes peeled for an NYC recap at the end of the month + a few sneak peeks of the project I’ll be working on!

monthly round up!!

neighborhood bakery — carrots: each month i host a little neighborhood bakery. i make 3 or so baked goods then hand deliver them to my neighbors. each month there’s a theme and the theme for may was carrots! i landed on the spread below and was so happy with how it turned out.

spring egg salad toast: a light and fresh egg salad that i’ve been eating all spring!

soba noodles: a continuation of my series where i take you to the asian market with me and show you the exact ingredients you need to buy to make all my favorite dishes at home. soba noodles are such an easy dish that can be enjoyed in such a variety of ways and i truly can’t get enough of them.

healthyish pistachio pudding: i’ve had a lot of healthy desserts that are just not good, so you can trust me when i tell you this one is good. like actually. and the secret ingredient? silken tofu!

lemon cheesecake: i first shared this recipe last year, but it’s too good not to share it again. i have always been a sucker for cheesecake (usually making the no-bake version) then i recently

lemon blueberry cookies with mascarpone whipped cream: the cookie of the month! a delightful soft cookie with lemon zest and fresh blueberries that screams summer. and if that wasn’t enough, each cookie is topped with a dollop of lemon mascarpone whipped cream which creates such a delightful bite. the cream makes the cookie even lighter and brighter, and even more summery.

I’ve been trying to limit my endless doom scrolling so whenever I feel the need to scroll, I’ve been opening Pinterest instead. it fills my desire to scroll, but I feel way more motivated and creatively inspired after a scroll on Pinterest, especially compared to other social media. it’s also led to a big fat wishlist (oops!), with these two pieces at the top.

I won’t overwhelm you with my entire wishlist, but stay tuned for next month to see my favorite picks! and try scrolling on Pinterest in the meantime!

that’s all for this month! excited for all the summer produce and summer recipes and summer cookies to come!!

xoxo,
