Hello from the last day of the first month of 2025! It feels like all the new year excitement has worn off, probably because it’s been such a wild start to the year, but I am still feeling hopeful for what is to come, or at least trying to! But one thing I am undoubtedly excited for is for this newsletter this year.

I’ve decided to switch up the Cookie Club newsletter a bit this year. Don’t worry, you will still be getting 1 new cookie recipe a month (who would I be if not a cookie creating machine?), but I’ve decided to expand the newsletter too. So no stress, you’re getting more, not less. Here’s a little breakdown of the Cookie Club newsletter 2.0:

I want to take a minute to thank you for being subscribed to the Cookie Club. Newsletters feel way more intimate than social media and I really do feel like all of you are my closest friends. Being subscribed here is showing that you value my work and for that I could not begin to thank you enough!!! Now for the moment you’ve all been waiting for brown butter raspberry chocolate chip cookies! I wanted a cookie that would warm us up for Valentine’s/Galentine’s season, and I think this one really did the trick. Nutty brown butter is combined with rich chocolate and tart raspberries for the perfect cookie bite. The edges are slightly crunch and the center is soft and gooey. This cookie will truly be love at first bite (hehe) and I really cannot think of a better cookie to celebrate love and friendship.

A few tips and notes for this cookie:

  • the recipe calls for fresh raspberries, so do not over-mix the raspberries in the dough! i gently tear them apart and them press them into the dough. you want as little of the juice to burst out as possible. lots of juice in the dough = soggy cookies and we just don’t want that.

  • if fresh raspberries aren’t your thing, use whatever! freeze dried raspberries or strawberries would be delightful. or go completely away from fruit and add toffee instead! or pistachios! or just go all in on chocolate! really make these yours.

  • if you are using fresh raspberries, these cookies will stay fresh for longer if you keep them in the fridge. even if you are very gentle with the raspberries, they will release a bit of juice, but i’ve found they won’t get soggy for several days if you keep them in the fridge. it keeps the raspberries firm and the texture stays much better!

  • if you want pools of chocolate like mine, make sure you are using chocolate chunks instead of chocolate chips. my go-to is to buy the extra large chocolate bars from trader joe’s, then just chop up a few squares of it to add in. i often like using a combo of their milk and dark chocolate for good variety. if you don’t live near a trader joe’s, any chocolate bars will do. i’ve been using tony’s chocolonely bars recently too and they’ve been great.

This month I did a mini-series all about bowls that make you feel good and taste good, because life is too short to eat boring food. I have done series like this in the past, and they are always some of my favorites. Bowls are such a fun way to get a colorful dinner that is flavorful and healthy. what i’m loving

  • rag & bone sent me their denim “sweats” and i am in shock over them, honestly. think jeggings from 15 years ago, but in the most flattering style and the softest material. it literally looks like you are wearing a nice pair of denim jeans, but really you’re living your comfiest life. my friend said it’s like a magic trick and it really is in every way.

  • i shared this tomato dutch oven in december as part of my gift guide, and it ended up under my christmas tree (thanks connor)!! i am just as obsessed with it as i thought i would be. it’s a fantastic, quality dutch oven, but is also the most stunning thing ever and i have it out on display at all times.
